Paleo Protein Bars

After long last, I’ve made a “protein bar” that meets most paleo criteria.  Thanks to @mommayoung for the recipe that I modified. Here’s the scoop:

INGREDIENTS – modifed
Coconut oil
14 egg whites
8 bananas
¼ cup honey
½ tsp vanilla
⅓ cup coconut flour
½ cup unsweetened shredded coconut
1 cup coconut milk
1 cup chopped pecans
6 scoops egg protein, vanilla

Bake in a 13×9, well greased w coconut oil, pan for 35-40min @ 350°.  Makes 8 to 16 bars depending on the caloric content you desire. Nutrition/8 bars:

Protein: 28g
Carbohydrate: 45g
Fat: 16g
Calories: 430

I’ve swapped out two bananas for 1 C of unsweetened applesauce. Comments welcome!
